Easy Biscuits




This is my favorite biscuit recipe. It is easy, quick and has never failed me.



2 1/2 cups all purpose flour (plus more for dusting)

1 Tablespoon baking powder

1 Teaspoon baking soda

1 teaspoon salt

2 teaspoons sugar

9 Tablespoons cold butter, diced into small cubes

1 cup chilled buttermilk


Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.


In a large mixing bowl, whisk together the dry ingredients. Cut in butter with a pastry blender or 2 knives until the mixture is coarsely combined and resembles small peas.

Add the cold buttermilk and gently fold until a sticky, wet dough forms. Flour hands and work the dough in the bowl until it holds together.


Turn out the dough on to a well floured surface and with floured hands, knead the dough until it comes together, adding flour as needed. Gently pat out the dough into a rectangle or square about 3/4 inch thick. Using a large knife or spatula cut the dough into 12 square biscuits. Cut straight down with out sawing. Sawing the dough prevents a good rise. I like cutting square biscuits to avoid wasting any dough, but you can use a round biscuit cutter if desired.


Transfer the biscuits to the cookie sheet placing them 1" apart. Bake for 13-15 minutes, or until golden brown. when biscuits are done, brush the tops with melted butter.
